170 Grammi has been making Roman-style pizza in Surry Hills since 2024, led by Luigi Esposito, a pizzaiolo with over 35 years of experience. Every dough ball starts at exactly 170 grams — high-hydration, long-fermented, and baked in a 1.9-tonne oven handmade in Italy — the technique behind La Tonda Romana and Scrocchiarella, thin and crisp rather than soft and heavy.
